Chilli con carne
















1 tbsp olive oil

2 large onions, finely chopped

3 garlic cloves, crushed

500g British beef mince

1 tbsp ground cumin

1 tsp smoked paprika (pimentón), hot or sweet, depending on how hot you like your chilli con carne

¼ tsp ground cinnamon

400g tin chopped tomatoes

250ml fresh beef stock

400g tin red kidney beans, drained and rinsed


Heat the oil in a large sauté pan over a medium-high heat and add the onions. Cook for 10 minutes, stirring often, until softened and translucent. Add the garlic and fry, stirring, for 2 minutes more until fragrant, then tip out into a bowl.

Turn up the heat to high, add the beef to the pan and season well, pressing it down with a wooden spoon and breaking it up so it browns all over. When it’s browned, tip out the juices from the pan and discard, then return the onions to the pan with the cumin, paprika and cinnamon. Cook, stirring, for 2-3 minutes until fragrant, then add the tomatoes with a pinch of sugar and the beef stock.

Bring to a simmer and cook, stirring occasionally, for 20-25 minutes until the beef has taken on the flavours of the spices and the sauce is reduced and thick. Add the kidney beans and cook for 5 minutes more, then taste, season and serve with your choice of accompaniments.

Easy Scones

1 cup pure cream
1 cup lemonade

3 cups self raising flour

pinch of salt

flour, for dusting

jam and cream to serve

 

METHOD

 

Preheat oven to 200°C or 180°C fan forced. Lightly flour a baking tray.

 

Place all ingredients in a bowl. Mix lightly until combined. Scrape onto a floured surface. Knead lightly and shape into a rectangle about 3 cm high. Cut out with a 5cm scone cutter.

 

Lightly dust with flour and bake for 15-20 minutes or until the top is browned.

 

Serve with jam and cream. Jam first of course

Salmon, Asparagus and Pea Frittata

Salmon, Asparagus and Pea Frittata | Shift Nutrition










A friend gave me this great recipe. So easy to prepare. About 5 minutes and just 15 to cook in the oven.
I only used 3 eggs but had all the other items that recipe says which are not many but all good
So here is my attempt. On left as prepared and on right after 15 minutes. Really tasty and I think good for you.

Ingredients

  • 3 eggs for one person
  • 2 tbsp natural yoghurt
  • Some Smoked salmon chopped
  • Some Asparagus pieces
  • Some frozen peas

Instructions

  • Preheat oven to 200c
  • Place eggs and yoghurt in a bowl and beat using a fork
  • Stir through other ingredients.
  • Spray a medium sized baking dish or oven proof frying pan with oil and pour in egg mixture. 
  • Bake for 15 minutes

Burmese Chicken Curry

Burmese Chicken Curry

1 chicken, 1 1/2  kg (3 Ib) .

 1/2 cup (125 ml) oil

2 teaspoons turmeric

1 cup (250- ml) chicken

3 teaspoons salt stock

6 onions

1 1/2 tablespoons rice flour  

2 teaspoons grated fresh ginger

3 cups (750 ml) coconut milk.

5 cloves garlic, minced ;..

1 teaspoon crushed red chilli peppers


 

1. Rub the chicken with the turmeric and place in a large saucepan. Add enough water to cover the chicken and bring to the boil. Reduce heat, add the salt and simmer until the chicken is tender.

2. Remove chicken from the saucepan and set aside until cool enough to handle. (Reserve the chicken stock.) Remove the chicken meat from the bones.

3. Finely chop four of the onions and mix together with the ginger, garlic and chilli peppers. Mix with the chicken and allow to stand for 1/2 hour.

4. Slice the remaining two onions and saute in the oil for three minutes. 5. Add the chicken mixture and cook until brown.

6. Stir in the chicken stock and bring to the boil. Reduce heat and simmer.

7. Mix the rice flour with one cup of the coconut milk. Slowly add to the chicken, stirring constantly.

8. Pour In the remaining coconut milk and cook over a medium heat for 1/2

hour.

Serves 4-6.

Note: If coconut milk is not available, heat together 31/2 cups (875 ml) of water with 2 1/4 cups (565 ml) of desiccated coconut. Allow to stand for 15 minutes, then strain.

Bring to Pressure at least 15 mins and then 10 minutes on low heat

This is the one that Ginnie thinks she got from us and it sounds right


1 peeled onion

2 cloves garlic

1/2 teaspoon Chilli powder

2 teaspoon curry powder

2.5 cms peeled ginger (is that 2 tspoons?)

4 oz skinned peanuts finely chopped (I think I used to use crunchy peanut butter anyway)

2 tablespoons peanut butter

1/2 cup vinegar

1/3 cup sugar

1 teaspoon salt (phew seems a lot)

1/3 cup fruit chutney

1/2 to 1 Cup of water


simmer slowly to reduce amount

Ron's Christmas Wallop

Ron's Christmas Wallop - a drink for Christmas
Ensure you have a clean bottle
Beat together
3 EGGS
1/2 tin of Condensed Milk - a good brand - it needs to be sweet
Add
1 Tablespoon of Coffee essence (yes the liquid with chicory - Camp Brand if avail)
plus
2 Tablespoons of Chocolate Topping
Beat again
add
3/4 cup of rum (whisky if you prefer it)
Beat Again
One carton of Fresh Cream (oh well its Christmas)
Beat 6 seconds - if too long will get very thick
Pour into bottle - should be enough left over for a taste
Put into fridge - this is a way of making cream last longer

I have been known to use one cup of rum which sure gives enough for a taste.
After all you need the Rum to keep the cream and eggs. 
Very nice on ice and with milk

not inexpensive -In Sydney we can buy Bushells which is very similar.
I suppose if the bottle stuff not available - you could make some very strong coffee and include in the mix

Moghlai Chicken Curry

Moghlai Chicken Curry
A wonderful curry so creamy and tasty.
The poppy seeds add this lovely surprise.
We make in batches and freeze portions.


2 kg (4 Ib) chicken .pieces

1/2 cup (125 g) butter
1 tablespoon paprika
3 onions, chopped
2 cups (500 ml) coconut milk
3 cloves garlic
3 bay leaves
1 cup (250 g) yoghurt
1 teaspoon powdered cinnamon
2 teaspoons freshly grated ginger
5 whole cloves
2 tablespoons poppy seeds
1 1/4 cups (300 ml) cream
2 Tomatoes, quartered
1/4 teaspoon saffron
1 1/2 tablespoons salt
3 tablespoons lemon or lime Juice
2-3 tablespoons curry powder

1. Melt the butter in a large saucepan and saute the onions and garlic until
golden brown.

2. Stir in the bay leaves, cinnamon and cloves and simmer for five minutes.

3. Add the chicken and cook for ten minutes.

4. Stir in the tomatoes, salt, curry powder, paprika, coconut milk, yoghurt,
ginger and poppy seeds. Cover and cook over a low heat until chicken'is
tender.

5. Stir in the cream, saffron and lemon or lime juice and heat thoroughly.

Serves 6.

Tangy Lemon Cake

Christine's recipe for Lemon Cake
3 large Lemons - now we are talking Tangy
1 cup butter / marg
1 cup sugar + 3 tablespoons of sugar for juice
1 + 1/2 cups white self raising flour and sift it
1/2 cup milk
2 eggs
pinch of salt
some cornflour
spray oil for cake tray

Grate rind from both lemons - and put juice aside.
Cream Butter and sugar until light and fluffy.
Add grated rind to cream mixture.
Add both eggs - one at a time and mix well.
Mix in sifted flour and milk.
Alternately starting and ending with flour.
Spray cake tray with oil and then dust with cornflour.
You could place baking paper in bottom - if you like perhaps not. 
Pre Heat oven and Bake at 200c for around 30 minutes
test with skewer to see if cooked

Take juice from lemons  boil with 3 tablespoons of sugar.
Loosen cake in tin first and then
Pour hot mixture over cake whilst still hot

Recipes: Dhal

Dhal

1 tablespoon oil
6 oz. (3/4 cup) red lentils, soaked for 30 minutes and drained
1 onion, finely chopped
1 clove garlic, crushed
1 pint (2 1/2 cups) stock
l/2 teaspoon ground turmeric
sea salt
1 teaspoon ground coriander
freshly ground black pepper
1 teaspoon curry powder

Heat the oil in a pan and fry the onion until soft. Stir in the garlic, turmeric, coriander and curry powder and cook for a further 2 minutes over a low heat.
Add the lentils, stock and seasoning, cover and cook gently for 50-60 minutes until the lentils are quite soft.
Dhal should be the consistency of a very thick pea soup. Adjust the seasoning and serve with a curry.

In India often served thinner and more like a gravy BUT we like this one

Recipes: Peanut Biscuit - Impossible Pie - Sour Cream Cake

Peanut Biscuits (remember tell people in case if allergy)
1/4 lb butter
1 cup s/r flour
half cup chopped peanuts
3/4 cup brown sugar
mix dry ingredients
melt butter mix all together
place in a flat tray & cut when you take out the oven. Leave in tray to
harden.
Cook in a moderate oven until light golden brown, a little darker than
when raw.
----------
Impossible Pie
3 eggs
1 cup milk
half cup s/r flour
1/4 cup melted butter.
Mix with fork and pour into pie dish.
dice any of the following -
bacon, mushrooms,salami, fish or salmon, corn, tomato etc,. throw into
pie dish. sprinkle 1 cup grated cheese on top. bake in moderately hot
oven till cooked.

Sour Cream Cake
6 oz melted & cooled butter.
1 1/2 cups s/r flour
1 1/2 cups brown sugar
1 1/2 teaspoon ground ginger
3 eggs
mix with spoon
300 mls sour cream
dob sour cream on top
place in lined tin 160 Celsius 1 hour.
sprinkle with icing sugar
Also nice in winter served hot as a dessert or cooled as cake.

BOILED CHOCOLATE CAKE with CHOCOLATE BUTTER ICING

BOILED CHOCOLATE CAKE
2 Cups water
2.5 Cups sugar
1 Cup butter
4 Tablespoons cocoa
1 Level teaspoon bicarb/soda

Boil all the above for 5 minutes in large saucepan.
Allow to cool, then:-

ADD
3 Cups self raising flour
4 Beaten eggs
Mix well, pour into 31 x 25 cm. baking dish lined
with alfoil.
Bake 350 - 400 degrees fahrenheit for
35 - 40 minutes or until cooked.
Ice with chocolate icing

CHOCOLATE BUTTER ICING
4.5 oz. icing sugar
1 tbsp. melted butter
1 tbsp. cocoa
2 tbsps. milk
1/2 tsp. vanilla essence

Put the icing sugar, cocoa, vanilla, and butter in a
mixing bowl.
Gradually add the milk, and stir
until the mixture is smooth and creamy.

Chicken Laksa

In Wok
400g chicken breast diced
1/2 teaspoon crushed garlic
1 teaspoon crushed ginger
4 minutes
toss in 1/2 cup carrot in strips
1/2 cup capsicum strips
2 minutes

add
1 cup bean sprouts
1/2 cup shallots sliced
1 tablespoon fresh coriander chopped
1 teaspoon meongrass in jar
3 teaspoons massaman curry paste
1 teaspoon tumeric
2 teaspoon chicken stock powder
1 cup water
1 teaspoon coconut essence
1 1/2 cups Singapore noodles

MIX WELL

Combine
1 of 375 ml evaporated light milk
1 tablespoon cornflour
add to dish

Simmer 5 minutes
Serve

Blueberry flapjacks


Batter
1 can blueberries save juice for sauce
2 egg whites - avoid yolks 6 g fat -

1/4 cup sugar
1/4 teaspoon vanilla essence
1/2 cup skim milk
1 cup self raising
1/2 teaspoon bicarbonate soda
cooking spray

Sauce
Juice and 1 tablespoon cornflour
keep stirring on medium heat

BATTER
Beat egg whites and sugar add essence and milk
fold flour until combined
fold berries

spray oil in pan
pour in a round shape and cook 2 minutes

Play Dough Recipe

2 cups plain flour
1 cup salt
4 tablespoons cream of Tartar
2 tablespoons cooking oil
2 cups water
colouring

Mix together
Cook stirring all the time
cool slightly and kneed until smooth
add a drop of oil of cloves or peppermint

store in airtight container in fridge
